The Premise

These are not the cheap eats. This is the other Hawaiʻi — the one that flies its fish in aged, pairs the wine before it plates the course, and asks you to book a month out and dress like you mean it.

I've eaten my way across Oʻahu for years, and this is the short list I keep for the nights that matter: an anniversary, a client, a splurge you'll talk about for a decade. Ranked loosely by ambition and expense, from the four-hundred-dollar sushi counter to the sixty-year-old French room under Diamond Head.
